Recipe: Guiltless Pancakes

Ingredients:
2 cups cassava flour
1/2 tsp baking soda
1 tsp baking powder
1 ½ cups full fat coconut milk
1 tsp pure vanilla extract

 

 

Directions:

 

 

-In a large bowl, mix cassava flour,

 baking soda and baking powder

 

-Empty the full can of coconut milk into

 a blender and blend on high until 

smooth

 

-Add vanilla extract to coconut milk

 

-Pour wet ingredients into dry mix and

 whisk until smooth (make sure there’s no lumps!)

 

-add avocado oil to a non-stick pan

 over medium heat (you can also use

 butter or ghee if you’re ok with eating dairy)

 

-Scoop pancake mix onto pan and

 cook 5-7 mins on each side until done

 (outside should be hard and crispy

 and inside should be cooked through)

 

-Serve with sweetener of your choice

 (I like to use pure maple syrup). Top

 with fresh berries or banana
